Avocado Toast with Soft-Boiled Eggs

Ingredients:
2 slices of your favorite bread (I love sourdough or multigrain)
1 ripe avocado
2 large eggs
1 tsp lemon juice
Salt and pepper to taste
Red pepper flakes (optional for a little kick)
Everything bagel seasoning (optional but highly recommended)
Instructions:
Soft-Boil the Eggs:
Bring a pot of water to a gentle boil. Carefully add the eggs and cook for 6-7 minutes. Remove and place them in an ice bath to stop the cooking. Peel and set aside.Toast the Bread:
Toast your bread slices until golden and crispy.Mash the Avocado:
In a small bowl, mash the avocado with lemon juice, a pinch of salt, and pepper to taste.Assemble:
Spread the mashed avocado evenly over the toasted bread. Slice the soft-boiled eggs thinly and place them on top.Season & Serve:
Sprinkle with red pepper flakes and everything bagel seasoning for extra flavor. Enjoy immediately!
